Method

Heat olive oil in a non-stick frying pan and soften the onion without browning.

Add the garlic and chilli and cook for sixty seconds.

Stir in the pepper, brown sugar, vinegar, and wine then bring to a boil.

Simmer the mixture until the liquid reduces by half and becomes syrupy.

Season the jam with salt and black pepper.

Lightly oil the tuna and fry for two minutes per side in a hot pan.

Serve the tuna on a plate topped with the chilli jam.
