Steps

  • Heat olive oil in a non-stick frying pan and soften the onion without browning.
  • Add the garlic and chilli and cook for sixty seconds.
  • Stir in the pepper, brown sugar, vinegar, and wine then bring to a boil.
  • Simmer the mixture until the liquid reduces by half and becomes syrupy.
  • Season the jam with salt and black pepper.
  • Lightly oil the tuna and fry for two minutes per side in a hot pan.
  • Serve the tuna on a plate topped with the chilli jam.
