Preheat your oven to 200°C.
Blend pastry ingredients in a food processor, wrap in film, and chill for 10 minutes.
Mix one pak choi, chilli, galangal, soy sauce, sesame oil, and seeds in a bowl.
Divide the mixture into scallop shells and replace the lids.
Roll out the pastry and use it to seal the edges of the shells together.
Bake the shells on an oven tray for 6 minutes.
Heat olive oil in a pan and stir-fry the remaining galangal, chilli, and pak choi for 3 minutes.
Season the stir-fry with soy sauce and sesame seeds.
Remove pastry from the shells and serve scallops with the stir-fried greens.
