Steps

  • Simmer raisins and orange juice in a small saucepan then let them plump in a warm place.
  • Melt butter, syrup, zest, sugar, lemon juice, and rum in a larger pan over low heat.
  • Combine oats, flour, and toasted pine nuts in a bowl, then stir in the melted butter and raisin mixture.
  • Spread the mixture into a lined tin and bake at 160°C for 25 to 30 minutes until golden.
