Steps

  • Dissolve 40g of butter in a pan and add 40g of flour.
  • Stir the mixture until it forms a smooth paste that leaves the pan sides cleanly.
  • Cook the paste for at least 2 minutes to remove the raw flour taste.
  • Pour in approximately 90ml of fluid and allow it to boil without stirring.
  • Beat the mixture vigorously until smooth, then incorporate the remaining fluid in batches.
