Steps

  • Sift the flour and salt into a large bowl.
  • Add the oil and 140ml of water to form a soft dough.
  • Knead the dough gently until smooth.
  • Cover the dough and let it rest for 30 minutes.
  • Divide the dough into six equal pieces and roll each into a 2mm thick circle.
  • Brush the dough with oil and fold into thirds twice to create layers.
  • Let the folded dough pieces rest again before final rolling.
  • Heat oil in a pan and roll one piece of dough into a thin round.
  • Fry each side for several minutes until puffed and speckled brown.
  • Fold the cooked roti and keep warm in a tea towel until served.
