Steps

  • Preheat the oven to 180°C.
  • Strip leaves from rosemary sprigs leaving 2.5 cm at the tip and thread the herring halves onto them.
  • Heat the olive oil and butter in an ovenproof pan and fry the herring for 5 minutes until browned.
  • Add the lemon halves to the pan and roast in the oven for 10 minutes.
  • Remove from the oven and serve immediately with the roasted lemon.
