Steps

  • Preheat the oven to 200°C and preheat the grill to high.
  • Place the onion, courgette, and tomato in a roasting tray.
  • Season with salt and pepper and drizzle with olive oil.
  • Roast in the oven for 8 minutes until vegetables are soft and golden.
  • Remove from oven and place vegetables onto the toast slices.
  • Top with mozzarella and grill for 2 minutes until golden.
