Steps

  • Heat citrus zests and sugar in an ovenproof pan until melted and golden.
  • Add peach halves and vanilla to the pan and bake for five minutes.
  • Turn the peach over and simmer the pan juices with water until thickened.
  • Whisk egg yolks, wine, and sugar in a bowl over simmering water for ten minutes.
  • Stir lemon zest into the sabayon and pour into a glass.
  • Top with peaches, drizzle with syrup, dust with sugar, and garnish with mint.
