Steps

  • Preheat the oven to 220°C.
  • Rub the beef fillet with salt, pepper, and olive oil.
  • Fry the beef in a very hot pan until browned on all sides.
  • Place beef and oiled garlic bulbs in a roasting tin and roast at 220°C for 23 minutes.
  • Remove the beef from the oven, cover with foil, and rest for 15 minutes.
  • Squeeze the roasted garlic paste from the cloves into a bowl.
  • Add the mayonnaise, crème fraîche, and sugar to the garlic.
  • Blend the mixture into a smooth purée and stir in the mustard.
  • Chill the sauce and carve the beef into thin slices to serve.
