Steps

  • Preheat the oven to 150°C.
  • Rinse the rice in cold water to remove surface starch.
  • Place the rice, milk, sugar, and vanilla syrup in a large saucepan.
  • Bring to the boil then simmer gently for 25 minutes, stirring every five minutes.
  • Simmer for five more minutes while stirring continuously.
  • Remove from heat and pour into a shallow 2L ovenproof dish.
  • Bake for 30 minutes and rest for at least one hour.
  • Sprinkle with sifted icing sugar to serve warm.
  • For a cold serving, sprinkle with caster sugar and grill for 2-3 minutes.
