Method

Trim sinew from the beef and cut into very thin strips.

Crush the garlic and onion and finely chop the ginger.

Mix the spring onions, soy sauce, sesame oil, chilli powder, and sugar in a bowl.

Combine the sauce with the beef strips and mix thoroughly.

Slice the pear into thin strips and prepare the lettuce leaves.

Arrange lettuce and pear on plates and top with the beef mixture.

Garnish with sesame seeds and a raw quail egg yolk.
