Method

Cut greaseproof paper into circles sized to fit the jam jar openings.

Simmer all ingredients and 150ml water in a pan until rhubarb softens.

Remove the vanilla pods from the mixture.

Pour hot jam into sterilised jars and cover with paper circles before sealing.
