  • Combine 150ml wine, sugar, and half a vanilla pod in a small saucepan.
  • Boil then simmer until sugar dissolves and wine reduces by half.
  • Remove the vanilla pod and let the liquid cool slightly.
  • Stir the saved vanilla seeds into 150ml whipped cream.
  • Place 100g berries in a bowl and scatter chopped mint over them.
  • Pour the wine reduction over the berries and top with a dollop of vanilla cream.
