Steps

  • Flatten the rabbit fillets between cling film until 0.5cm thick.
  • Place bacon and sage between fillets and season with salt and pepper.
  • Fry fillets in oil for 4 minutes per side until golden brown.
  • Add 150ml of beer or wine and bring to a boil.
  • Simmer covered for 10 minutes.
