Steps

  • Soak the quinoa in 500ml salted cold water for at least 8 hours and drain well.
  • Simmer the quinoa in boiling stock for 12 minutes until tender, then drain and cool.
  • Preheat the oven to 190°C.
  • Whisk eggs, chickpea flour, herbs, chilli, and garlic together before stirring in onions, halloumi, and quinoa.
  • Shape the mixture into 16 equal patties.
  • Fry patties in hot ghee for 4 minutes per side until a golden-brown crust forms.
  • Transfer burgers to a tray and bake in the oven for 15 minutes until cooked through.
  • Serve burgers with a green salad, red onion, and avocado.
