Soak the quinoa in 500ml salted cold water for at least 8 hours and drain well.
Simmer the quinoa in boiling stock for 12 minutes until tender, then drain and cool.
Preheat the oven to 190°C.
Whisk eggs, chickpea flour, herbs, chilli, and garlic together before stirring in onions, halloumi, and quinoa.
Shape the mixture into 16 equal patties.
Fry patties in hot ghee for 4 minutes per side until a golden-brown crust forms.
Transfer burgers to a tray and bake in the oven for 15 minutes until cooked through.
Serve burgers with a green salad, red onion, and avocado.
