Steps

  • Mix the espresso, caster sugar, and amaretto in a large bowl.
  • Soak the panettone slices in the coffee mixture and set aside.
  • In a separate bowl, mix the mascarpone, vanilla seeds, and icing sugar.
  • Fold the whipped double cream into the mascarpone mixture.
  • Create sandwiches by layering mascarpone cream between two slices of soaked panettone on individual plates.
  • Spoon remaining cream on top, dust with cocoa and coffee powder, then chill for 1 to 2 hours.
  • Garnish with grated dark chocolate before serving.
