Steps

  • Heat the oil in a heavy-based saucepan or wok to 120°C.
  • Whisk together the flour, eggs, spices, milk, salt, and pepper.
  • Gently fold in the sliced onions without crushing them.
  • Place a cube of brie into a tablespoon of the batter.
  • Scoop the cheese-filled batter into the hot oil.
  • Fry the bhajis until they are golden brown and crispy.
  • Drain the cooked bhajis on kitchen paper.
  • Season with salt and garnish with chopped coriander and chives.
