Steps

  • Drain the white beans and simmer in water for one hour until soft, then drain again.
  • Fry bacon in oil, then sauté onion and garlic until soft.
  • Add tomatoes, purée, sugar, vinegar, 500ml water, and beans to the pan.
  • Simmer for 1.5 to 2 hours until the sauce is thick.
  • Preheat the oven to 200°C.
  • Mix bread ingredients together and shape into a loaf.
  • Dust loaf with flour and bake on a tray for 45 to 50 minutes.
  • Cool the bread before slicing and toasting.
  • Season the beans and serve on the toasted soda bread.
