Steps

  • Preheat the oven to 220°C.
  • Spread a 1cm layer of rock salt on a small roasting tray.
  • Place half of the thyme sprigs on the salt and lay the prawns on top.
  • Add the remaining thyme and cover the prawns completely with the rest of the salt.
  • Sprinkle the salt lightly with water.
  • Bake in the oven for 6 to 7 minutes.
  • Crack the salt crust, remove the prawns, and serve with lemon wedges.
