Steps

  • Preheat the oven to 200°C.
  • Whisk together honey, soy sauce, and olive oil in a bowl.
  • Marinate the prawns in the mixture for two minutes.
  • Char-grill prawns on a hot griddle pan for two minutes per side and set aside the marinade.
  • Mix the mango, chilli flakes, and spring onion together in a separate bowl.
  • Fry prawn shells and tomato purée in vegetable oil for four minutes then strain the oil.
  • Plate the salsa, top with prawns, and drizzle with the reserved marinade and prawn oil.
