Method

Preheat the oven to 200°C.

Whisk together honey, soy sauce, and olive oil in a bowl.

Marinate the prawns in the mixture for two minutes.

Char-grill prawns on a hot griddle pan for two minutes per side and set aside the marinade.

Mix the mango, chilli flakes, and spring onion together in a separate bowl.

Fry prawn shells and tomato purée in vegetable oil for four minutes then strain the oil.

Plate the salsa, top with prawns, and drizzle with the reserved marinade and prawn oil.
