Steps

  • Soak a wooden skewer in cold water for ten minutes.
  • Thread prawns onto the skewer and season with olive oil, salt, and pepper.
  • Griddle the prawn skewer for 2-3 minutes per side and finish with lime juice.
  • Heat 300ml of vegetable oil in a saucepan until hot.
  • Fry rice noodles for 1-2 minutes until puffed and drain on paper.
  • Heat 2 tablespoons of olive oil with chilli flakes for 2-3 minutes to infuse.
  • Serve prawns over noodles, drizzle with chilli oil, and garnish with coriander and lime.
