Method

Bring a small saucepan of water to a simmer.

Add half the lemon juice and the prawns to the pan.

Poach prawns for three minutes until cooked and let cool.

Whisk remaining lemon juice, ketchup, Tabasco, yoghurt, and lime juice in a bowl.

Drain cooled prawns, chop them roughly, and stir into the sauce.
