Steps

  • Preheat the grill to high.
  • Simmer shallots and 60ml of port in a pan until liquid is absorbed.
  • Melt 50g of butter and stir in 50g of flour to create a paste.
  • Gradually whisk in 290ml of milk and simmer until thickened.
  • Stir in the Stilton and Cheddar until melted.
  • Mix in mustard, egg yolks, and port shallots.
  • Spread the mixture onto 1cm thick bread slices.
  • Grill on a baking sheet for 1-2 minutes until bubbling.
  • Serve immediately with dressed watercress.
