Steps

  • Preheat the oven to 180°C.
  • Roast sausages in a baking tray for 25 to 30 minutes until cooked through.
  • Melt sugar in a frying pan over medium heat until nearly caramelised.
  • Add diced pineapple and cook for 5 minutes until lightly caramelised.
  • Mix pineapple with chilli, sambal oelek, lime juice, and coriander in a bowl.
  • Season salsa with salt to taste.
  • Whisk lemon juice and olive oil together in a small bowl.
  • Toss rocket with the lemon dressing and serve with the sausages and salsa.
