Steps

  • Melt duck fat in a saucepan over medium heat until it reaches 60°C.
  • Poach salmon pieces in the fat for 5 minutes.
  • Drain salmon on kitchen paper using a slotted spoon.
  • Whisk sugar, vinegar, and water in a bowl and season with salt and pepper.
  • Toss the dressing with cucumber and mooli.
  • Plate the salad, top with salmon, and garnish with amaranth and cress.
