Steps

  • Heat oil in a large saucepan over medium heat.
  • Fry onion, carrot, and pepper for 5 minutes until softened.
  • Add garlic and cook for 2 minutes while stirring.
  • Add remaining sauce ingredients, 100ml water, salt, and pepper.
  • Simmer for 20 minutes until vegetables are soft and liquid evaporates.
  • Remove the bay leaf and blend the sauce until smooth.
  • Preheat the grill to its hottest setting.
  • Spread sauce on pitta breads and top with ham and mozzarella.
  • Grill for 3 minutes until the cheese is melted and golden.
