Steps

  • Preheat the oven to 200°C.
  • Line a 32x23cm baking tin with parchment paper.
  • Whisk the eggs and milk together in a jug.
  • Mix the dry ingredients in a bowl while reserving a handful of pistachios.
  • Stir in the pistachio butter and quince jam.
  • Gradually add the egg mixture and stir until the batter is smooth.
  • Pour the batter into the prepared tin.
  • Crush the reserved pistachios and sprinkle them over the top.
  • Bake for 35 to 40 minutes until golden brown.
  • Cool in the tin for 10 minutes then transfer to a wire rack.
  • Cut the bake into 12 slices.
