Steps

  • Heat olive oil in a saucepan over medium heat.
  • Fry onion for 5 minutes until softened.
  • Add garlic and chilli and fry for 2 minutes.
  • Stir in tomatoes, vinegar, tomato purée, Tabasco, sugar, and half of the basil.
  • Season with salt and pepper.
  • Simmer the sauce until thickened and reduced.
  • Stir in the crumbled mozzarella and drained pasta.
  • Serve topped with remaining basil and grated Parmesan.
