Steps

  • Heat sugar and water in a pan until dissolved and beginning to caramelise.
  • Stir in chopped pear, verbena, and a squeeze of orange juice.
  • Simmer the whole pear half cut-side down in the pan for 6 minutes.
  • Mix cream cheese with remaining orange juice, zest, icing sugar, and vanilla seeds.
  • Place a chef's ring on a plate and spoon in half of the chopped pear.
  • Pack the cream cheese mixture on top and carefully remove the ring.
  • Top with the pear half and garnish with remaining chopped pear, juices, and verbena.
