Steps

  • Heat the oil in a saucepan and sauté the onion and garlic for 3 minutes.
  • Pour in the stock and bring the liquid to a boil.
  • Add the mint and peas then simmer gently for 10 minutes.
  • Transfer the mixture to a liquidiser and blend until smooth.
  • Return the soup to the pan and stir in the cream and seasoning.
  • Ladle the soup into bowls to serve.
