Steps

  • Melt the butter in a small saucepan and set aside.
  • Line a 20cm square cake tin with filo sheets and brush with 15ml of melted butter.
  • Layer scrunched filo, crumbled feta, Parmesan, and thyme, drizzling with another third of the butter.
  • Repeat the layering process until ingredients are used, finishing with a scrunched filo lid.
  • Fold overhanging edges inward, pour over remaining butter, and score into 9 squares.
  • Whisk eggs with milk, pour over the pie, sprinkle with sesame seeds, and rest for 30 minutes.
  • Bake at 180°C for 30 minutes until golden, then rest for 10 minutes and drizzle with honey.
  • Slice using a serrated knife and serve with extra honey on the side.
