Steps

  • Melt butter in a heavy-based pan and cook pancetta for 5 minutes.
  • Add onion, garlic, carrot, celery, mushrooms, and bay leaves and cook for 10 minutes.
  • Brown the minced meat over high heat for about 8 minutes.
  • Add milk, tomatoes, wine, stock, nutmeg, salt, and pepper.
  • Simmer the sauce partially covered for 90 minutes.
  • Stir in cooked pasta and serve with grated parmesan.
