Steps

  • Heat 15ml of olive oil in a large lidded saucepan.
  • Cook the shallots and garlic in the hot oil for one minute.
  • Add 1kg of mussels and pour in 330ml of beer.
  • Mix the ingredients, cover with a lid, and turn up the heat.
  • Cook while shaking the pan until all mussels have opened.
  • Discard any mussels that remain closed after cooking.
  • Spoon the mussels and juices into bowls and garnish with parsley.
