Steps

  • Peel the zest thinly from the orange and lemons and reserve the squeezed juice.
  • Stick the whole cloves into the satsumas.
  • Combine the wine, 1.2 litres of water, citrus peels, juices, studded satsumas, and cinnamon in a large saucepan.
  • Bring the mixture to a boil then reduce heat to simmer.
  • Cover and simmer for about 1 hour, gradually adding sugar to taste.
  • Strain the liquid and serve hot in cups.
