Steps

  • Cut circles from the bread slices using a 10cm pastry cutter.
  • Place a basil leaf on four of the bread circles.
  • Layer a slice of mozzarella and another basil leaf on top.
  • Add sliced spring onions and season with salt and pepper.
  • Top with remaining bread circles and press edges firmly to seal.
  • Dredge sandwiches in seasoned flour then dip into the beaten egg mixture.
  • Heat olive oil in a large non-stick frying pan over medium heat.
  • Fry sandwiches for 3-4 minutes per side until golden-brown.
  • Serve two sandwiches per person with sea salt and tomato chutney.
