Steps

  • Heat olive oil in a large pan and sauté onion, peppers, garlic, chorizo, and chicken for ten minutes.
  • Add the hot chilli peppers to the pan.
  • Stir in the rice along with chilli powder, turmeric, and Cajun spices until the rice is well coated.
  • Pour in 1.1 liters of chicken stock or water and bring the mixture to a simmer.
  • Add the mixed vegetables, bring to a boil, then reduce heat to a simmer.
  • Incorporate the prawns or crayfish once the rice is partly cooked.
  • Simmer for 45 to 60 minutes and season with salt and pepper to taste.
  • Serve the jambalaya hot.
