Steps

  • Heat olive oil in a saucepan and fry the onion for 2-3 minutes until soft.
  • Pour in 500ml of stock and bring the mixture to a boil.
  • Add 85g of peas and cook for 2-3 minutes.
  • Stir in the cream and 2 tablespoons of mint, then blend until smooth.
  • Season with salt and pepper to taste.
  • Serve in a bowl garnished with the remaining mint and parsley.
