Steps

  • Mix the beef, thyme, and spring onions in a bowl and season with salt and pepper.
  • Form the mixture into 10 flattened balls.
  • Fry the meatballs in olive oil over medium heat for 6 minutes until golden and cooked.
  • Sauté garlic and chilli in a saucepan with oil for 1 minute.
  • Add the tomatoes and simmer on high heat for 5 minutes.
  • Stir in most of the basil and season with salt and pepper.
  • Serve meatballs and sauce over the cooked tagliatelle.
  • Top with Parmesan and remaining basil.
