Steps

  • Preheat the oven to 180°C and grease and line a loaf tin.
  • Rub the flour and butter together in a bowl until the mixture looks like breadcrumbs.
  • Stir the caster sugar and mixed spice into the flour mixture.
  • Mix the marmalade, orange juice, raisins, and milk together in a separate bowl.
  • Combine the wet and dry mixtures and spoon into the prepared loaf tin.
  • Sprinkle demerara sugar over the top.
  • Bake for 30 to 35 minutes until golden-brown and a tester comes out clean.
