Steps

  • Preheat the oven to 200°C.
  • Heat butter, mango, and honey in an ovenproof pan until bubbling.
  • Stir in lime juice and roast in the oven for 6 minutes.
  • Heat butter in a pancake pan and ladle in the batter.
  • Fry each pancake for 2 minutes per side until golden.
  • Serve pancakes topped with roasted mango slices.
