Steps

  • Preheat the oven to 200°C.
  • Blend the butter and sugar in a food processor until smooth.
  • Add flour, baking powder, eggs, milk, and ginger and blend until combined.
  • Pour mixture into a greased 25cm tin and top with mango pieces.
  • Bake for 12 to 15 minutes until risen and springy.
  • Cool for a few minutes before removing from the tin.
  • Mix icing sugar and water in a bowl until smooth.
  • Drizzle icing over the pudding and dust with extra sugar.
