Steps

  • Preheat the oven to 200°C.
  • Mix oil, carrots, onion, and chicken wings in a roasting tin and roast for 45 minutes.
  • De-glaze the tin on the hob with wine or water and scrape up caramelised bits.
  • Transfer ingredients to a saucepan, stir in cornflour, add stock, and simmer for 20 minutes.
  • Strain the gravy through a fine sieve, season with salt and pepper, and allow to cool.
  • Freeze the gravy in a sealed container and defrost in the fridge before use.
  • Reheat in the microwave for 4 minutes or in a turkey roasting tray before serving.
