Method

Preheat the oven to 180°C.

Rub the butter into the flour until it resembles fine breadcrumbs.

Stir in the light muscovado sugar and ground cinnamon.

Add the diced apples and beaten eggs to the mixture and beat until well combined.

Distribute the batter evenly between two greased and lined 450g loaf tins.

Arrange sliced apples on top and sprinkle with demerara sugar.

Bake for 35 to 45 minutes until golden-brown and firm.

Brush the tops with warmed apricot jam.

Cool in the tins for 10 minutes before transferring to a wire rack.
