Steps

  • Heat 1 tbsp of olive oil in a pan and cook onions until softened and colored.
  • Stir in the sugar and fry for two minutes.
  • Pour in red wine and boil until reduced by half.
  • Stir in marmalade to thicken and season to taste.
  • Fry ham in remaining oil until crisp then drain on paper.
  • Fry liver steaks for three minutes per side until pink and rest.
  • Plate the liver and ham with a spoonful of the onion sauce.
  • Serve with salad, orange segments, and a drizzle of crème fraîche.
