Method

Heat 1 tbsp of olive oil in a pan and cook onions until softened and colored.

Stir in the sugar and fry for two minutes.

Pour in red wine and boil until reduced by half.

Stir in marmalade to thicken and season to taste.

Fry ham in remaining oil until crisp then drain on paper.

Fry liver steaks for three minutes per side until pink and rest.

Plate the liver and ham with a spoonful of the onion sauce.

Serve with salad, orange segments, and a drizzle of crème fraîche.
