Steps

  • Halve pomegranates and scoop out seeds with a teaspoon, removing any white membrane.
  • Place couscous in a bowl and pour in 250ml boiling stock, olive oil, and lemon juice.
  • Season with salt and pepper, cover with clingfilm, and let sit for 10 minutes.
  • Remove the film and fluff the couscous grains with a fork.
  • Let the couscous cool completely before stirring in the herbs and pomegranate seeds.
  • Adjust the seasoning and olive oil to your taste before serving.
