Steps

  • Rinse the chicken pieces in cold water and pat dry with kitchen paper.
  • Combine the flour, herbs, cayenne, white pepper, and salt in a large plastic bag.
  • Beat the evaporated milk and eggs together in a bowl.
  • Heat the sunflower oil in a large pan to 180°C.
  • Dip each chicken piece into the milk mixture, then shake in the flour bag until coated.
  • Fry the chicken pieces in the oil for 18 to 20 minutes until crisp and golden brown.
  • Drain the chicken on kitchen paper and serve with fries and optional sauces.
