Steps

  • Pulse the lamb, onion, and mint in a food processor with seasoning until mixed but not pasty.
  • Combine the lamb mixture with flour in a bowl and form into four patties.
  • Chill the patties in the fridge while preparing the onion mixture.
  • Heat 15ml of oil in a pan and cook onion rings gently for three minutes.
  • Add the artichokes to the pan, cover, and cook for five minutes.
  • Stir in honey and chilli flakes and cook uncovered over high heat for three minutes.
  • Heat 30ml of oil in a second pan and cook the lamb patties for three minutes on each side.
  • Plate the lamb patties and top them with the onion and artichoke mixture.
