Pulse the lamb, onion, and mint in a food processor with seasoning until mixed but not pasty.
Combine the lamb mixture with flour in a bowl and form into four patties.
Chill the patties in the fridge while preparing the onion mixture.
Heat 15ml of oil in a pan and cook onion rings gently for three minutes.
Add the artichokes to the pan, cover, and cook for five minutes.
Stir in honey and chilli flakes and cook uncovered over high heat for three minutes.
Heat 30ml of oil in a second pan and cook the lamb patties for three minutes on each side.
Plate the lamb patties and top them with the onion and artichoke mixture.
