Steps

  • Mix the minced lamb, red onion, garlic, rosemary, and mint in a bowl.
  • Divide the mixture into six portions and shape into patties.
  • Heat a griddle pan until smoking, oil the patties, and cook for 6 minutes per side.
  • Fry the sliced onion in 15ml of olive oil until softened and move to a bowl.
  • Mix harissa, chickpeas, yoghurt, remaining olive oil, lime juice, and mint with the onions.
  • Place a piece of grilled focaccia on each plate and top with watercress.
  • Place the burger on the watercress and top with the chickpea salad.
