Method

Mix beef, half the onion, half the herbs, salt, and pepper in a bowl.

Form the mixture into 10 small balls.

Brown meatballs in a sprayed frying pan for 7 minutes and set aside.

Sauté the remaining onion for 3 minutes, then add garlic.

Stir in tomatoes, 300ml water, remaining herbs, and basil.

Simmer meatballs in the sauce for 20 minutes until thick.

Peel courgettes into ribbons using a vegetable peeler.

Boil courgette ribbons for one minute and drain.

Serve meatballs and sauce over courgette ribbons garnished with extra basil.
