Method

Warm 150ml milk in a pan and whisk in the flour until boiling.

Simmer the mixture until thickened and melt in the cheese.

Stir in breadcrumbs, mustard, and 120ml stout until the mixture leaves the pan sides.

Transfer to a bowl and allow to cool slightly.

Beat in the egg yolks vigorously and fold in the spring onions.
