Steps

  • Warm 150ml milk in a pan and whisk in the flour until boiling.
  • Simmer the mixture until thickened and melt in the cheese.
  • Stir in breadcrumbs, mustard, and 120ml stout until the mixture leaves the pan sides.
  • Transfer to a bowl and allow to cool slightly.
  • Beat in the egg yolks vigorously and fold in the spring onions.
  • Spread onto toasted soda bread and grill until golden brown.
